Cocktails, Wines & More
Red, White and Brut
INGREDIENTS
3 ounces Barefoot Bubbly Brut Cuvee
1/2 ounce Raspberry Syrup or 1/2 ounce Raspberry Liqueur
1/4 ounce Blue Curacao
1 large whole Fresh Strawberry
DIRECTIONS
Place raspberry syrup in bottom of champagne flute.
Carefully place whole strawberry on top of raspberry syrup.
Slowly pour Brut Cuvee on top of strawberry. Strawberry will begin to float.
Carefully pour blue curacao over top of strawberry.
Smirnoff Red White & Berry Apertif Spritz
6–8 ice cubes
0.75 oz. Smirnoff Red, White, & Berry Seltzer
0.75 oz. Italian aperitif
0.75 oz. Sparkling water
1 thin orange slice for garnish
Fill a wine goblet with ice. Add Smirnoff Seltzer Red White and Berry, followed by Aperol and soda water. Garnish with an orange slice, mint and edible orange flower petals.
Berry Bubbly
Ingredients
6 oz chilled Chandon Brut
3 frozen blueberries
3 frozen raspberries
Method
Put frozen fruit into a wine glass or flute. Pour the Chandon Brut into a glass slowly.
Aperol Spritz (“Perfect Serve” Recipe)
Ingredients
Ice cubes
Chilled Prosecco
Aperol
Soda, served from syphon or chilled bottle
Slice of orange
Instructions: In a glass full of ice, combine Prosecco followed by Aperol in equal parts. Add a splash of soda and garnish with an orange slice.
The Breeze Blows on the Bay
Ingredients:
1 part Grey Goose vodka
4 parts White Claw Pineapple
1 part cranberry juice
½ part lime juice
1 pineapple wedge
Method: Build over ice and stir
Garnish: Sprig of fresh thyme
Guabanana Spritz
Ingredients:
1oz Santa Teresa 1796 Rum
3/4oz fresh lime juice
1/2oz simple syrup
1/4oz banana liqueur
Libations Cherry Lime Guava hard seltzer
Method: Short shake and strain into a Collins glass with fresh ice. Top with Libations Cherry Lime Guava hard seltzer.
Garnish: A cherry and lime wedge.
Bombay Iceberg
Ingredients:
1.5 oz. Bombay Sapphire
½ oz. Martini Bitter
¾ oz. Orange Juice
¾ oz. Lime
¾ oz. Passionfruit Syrup**
Watermelon White Claw
Method: Add to a Blender with 8 ice cubes. Blend until smooth (should be a thick consistency). Add 2 oz. Watermelon White Claw. Scrape into a pint glass
**Passionfruit Syrup:
Blend together 100 grams Passionfruit Syrup (preferred Ceres) and 100 grams white sugar until smooth, or cooked over medium low until all the sugar is dissolved. Cool and use within 2 weeks.
Disaronno Fizz
1.5 oz Disaronno
Fresh lemon juice
Fever Tree Club Soda
Pour Disaronno over ice, add a squeeze of fresh lemon juice and top up with club soda. Stir and garnish with lemon zest.
Sparkling Shed Berry
1.5 oz Broken Shed Vodka
Splash of cranberry juice
Fresh seasonal berries
Club soda
Top up with club soda. Serve over ice garnished with berries.
Berry United Lemonade Punch
2 cups Diplomático Reserva Exclusiva
3 cups lemonade
1 cup cold water
4–6 dashes Angostura bitters
Lemons (garnish)
Blueberries (garnish)
Ice
In a pitcher with ice, pour Diplomatico Rum, lemonade and water. Add in lemon and bitters. Garnish with lemon slices and blueberries. Serve chilled.
The Jalapeño Avocado Margarita
4 oz. Tequila Bribón Blanco
2 oz. Agave nectar (cut 50/50 with water)
2 oz. Fresh squeezed lime juice
1/2 avocado, peeled and mashed
2 slices jalapeño
Lime wheels, for garnish
1 cup ice, plus extra for serving
Fill two rocks glasses with ice. Set aside. Place ripe avocado, and jalapeno slices in a cocktail shaker. Muddle ingredients until they’re thoroughly mashed. Add remaining ingredients to the cocktail shaker and shake vigorously. Strain into the two rocks glasses. Garnish with the remaining lime wheels.
The Ferris Wheel
2 ounces Bolthouse Farms Multi-V Goodness Cherry
2 ounces club soda
½ ounce lemon juice
1 ounce Monin Cotton Candy Syrup
Star shaped ice cubes
White sugar rim
Maraschino cherry
Prep
Rub a lemon around the rim of the class, then dip the rim into thin layer of white cane sugar
Fill your glass with star-shaped ice cubes
Pour the cotton candy syrup over the back of a spoon directed towards the side of the glass
In a separate glass, mix the Bolthouse Farms Multi-V Goodness Cheery, lemon juice and club soda
Slowly pour into one side of the glass to maintain the color separation
Garnish with a cherry and serve
Mango Tequila Sunrise
Ice
3oz Grenadine
2 oz Tequila
4 oz orange juice
3 oz Bolthouse farms Amazing Mango
Raspberries
Blood orange
Prep
Add ice into glass
Pour grenadine, tequila, orange juice and then Bolthouse Farms Amazing Mango over ice.
Garnish with raspberries and slice of Blood Orange
The Golden Dram
INGREDIENTS
2 oz Aberfeldy 12 Single Malt Scotch whisky
2 barspoons (0.5oz) of local honey syrup*
* Honey Syrup: 100g of honey and 64g water, stir and leave to chill. Note: syrup will only last 3 days
2 dashes Angostura bitters
2 dashes orange bitters
METHOD
Add the honey syrup, bitters and Aberfeldy 12 to a mixing glass, then add ice and stir to dilute (~30 seconds). Pour into rocks glass and add block ice, then garnish with an orange twist expressing the oils over the drink.
Grand Marnier: Grand Collins Cocktail
INGREDIENTS
1.5 PARTS GRAND MARNIER CORDON ROUGE
.75 PART LEMON JUICE
1 BARSPOON SIMPLE SYRUP
3 PARTS SODA WATER
Build drink in tin, add ice and shake. Strain over ice into a Collins glass
Bulleit Rye Apple Pie Old Fashioned
1.5 oz Bulleit Rye
.25 oz Cinnamon Syrup
2 Dashes Aromatic Bitters
2 Dashes Hella Apple Blossom Bitters
Stir all ingredients with ice and strain over fresh ice.
Glass: Double Rocks Glass
Garnish: Orange Swath and Cinnamon Stick
Camarena Salsa-Rita
Ingredients
2 oz. Camarena Silver
1 oz. Lime Juice
.5 oz. Agave Nectar
2 oz. Pineapple Juice
3–4 Cilantro Leaves
Directions:
Add ingredients into a cocktail shaker filled with ice, and shake together to combine/chill. Strain (or Double Strain) into an ice-filled glass, and garnish with Cilantro, Lime, and Pineapple Frond.
Kim Crawford Frosé Recipe
INGREDIENTS
1 bottle Kim Crawford Rosé
Lemon twist to garnish
DIRECTIONS
2 days before serving pour wine into a 9” x 13” pan or several ice cube trays and freeze, stirring occasionally if in a pan. When frozen solid, using a hand blender or food processor, blend frozen wine until smooth. Serve directly or freeze again for up to 1 week, covered. Garnish with lemon twist. Makes 5 Servings
