2 oz Cincoro Reposado Tequila
6 oz Muddled blackberries

Top with 2 oz Ginger Beer and a splash of soda water
Method
Place the blackberries, lime juice and light agave nectar in a mixing glass. Muddle to extract their juices. Add ice and Tequila, shake and strain over fresh ice in a Collins glass and top with a splash of soda and ginger beer.

Method

Method

1 oz Tanqueray London Dry Gin
1 oz Lemon Juice

Method

Ingredients
2 ounces fresh raspberries
1/4 ounce light blue agave

Method
Measure out 2 ounces of fresh raspberries. Using a fine mesh strainer and muddle, separate the juice from the pulp.
Discard the pulp and add to the raspberry juice the remaining ingredients, add ice and shake until cold.
Pour into a cocktail glass, and add garnish with a lime peel and fresh raspberries on a skewer.

Medium purple/ruby color with attractive aromas of strawberry compote, red cherry and plum with toasted oak, vanilla and cinnamon spice, leather, red licorice, a little camphor with subtle purple floral notes.
On the palate the wine is moderate to not quite full-bodied with ripe fruit of red berry, cherry and plum with vanilla, cinnamon and toasted oak leading into a mid-palate that features leather, a touch of dried herbs, camphor with underlying earthy notes. This incredible vino’s well-integrated oak shows aromas of brioche, vanilla, and ginger spice, so it stands up well with heartier flavors. This Chardonnay pairs well with a green bean casserole or, everyone’s favorite side, a creamy mashed potato.
2020 Mayacamas Chardonnay
The 2020 Chardonnay was harvested by hand in mid-August, cluster sorted, whole cluster pressed and fermented and aged in neutral oak barrel, puncheon, and foudre before bottling. The wine opens with lifted aromatics of white flowers and fresh tarragon supported by a lovely fruit set of Anjou pear, tart pineapple, and cantaloupe.
On the palate the wine expands, broadening the frame, bringing layers of texture and energy with secondary flavors of lemon oil, mineral, and almond. The finish is long with lingering saline notes, subtle tropics, orchard fruit, and flint rock.
